Ingredients:

3 1/2 cups WonderMill high-gluten flour
1 packet (2 1/4 tsp) active dry yeast
1/2 cup warm milk (110°F/45°C)
1/4 cup granulated sugar
1/4 cup margarine, melted
2 large eggs
1/2 tsp salt
1/2 cup cocoa powder
1/2 cup dark chocolate chips or shavings
Powdered sugar for dusting

Instructions:

Activate Yeast: In a bowl, combine warm milk, yeast, and 1 tbsp of sugar. Let it sit for 5-10 minutes until foamy.
Make Dough: In a large bowl, mix WonderMill high-gluten flour, the remaining sugar, salt, melted margarine, eggs, and yeast mixture. Knead for 8-10 minutes until smooth and elastic.
First Rise: Place the dough in a greased bowl, cover, and let it rise in a warm spot for 1 hour, or until doubled in size.
Roll and Fill: Roll the dough into a large rectangle. Sprinkle cocoa powder evenly and spread chocolate chips or shavings over the surface. Roll tightly into a log and cut into 1-inch slices.
Second Rise: Arrange the slices in a greased baking dish, leaving space to expand. Cover and let them rise for another 30 minutes.
Bake: Bake in a preheated oven at 375°F (190°C) for 18-20 minutes until golden brown.

¼ cup whipped topping
Topping:

Directions:

In a mixing bowl, whisk together eggs and sugars.

Ingredients:

1 1/2 cups Ungar's fruity pebble cereal
3/4 cup oil
1 1/2 cups brown sugar
3/4 cup sugar
3 eggs
1 tsp vanilla extract
1/2 tsp baking soda
3 cups Isaac Wonder Mills Flour

Glaze:

1 cup fruity pebbles, divided
1 cup confectioners sugar
1/2 T oil
Soy milk

Directions:

Preheat your oven to 350°F.
Blend 1 1/2 cups of fruity pebbles finely in a food processor.
Mix with the rest of the ingredients.
Press the mixture into a lined 9x13 pan.
Bake for 30-35 minutes.

Glaze Time!

Soak half a cup of fruity pebbles in soy milk until soggy.
Strain the milk, keeping it for the glaze.
Combine the confectioners sugar and oil. Add the reserved milk, one tablespoon at a time, until you get the right consistency.
Spread the glaze over the fruity pebble squares.
Sprinkle with the remaining half cup of cereal.

The Timeless Cheese Blintz:

Ingredients:

For the Crepe Batter:
1 cup Wonder Mills Flour
1 cup milk
3 large eggs
1 tablespoon sugar
Pinch of salt
2 tablespoons melted butter

For the Filling:
1 ½ cups cottage cheese or farmer's cheese (strained if necessary)
1 egg
2 tablespoons sugar
1 teaspoon vanilla extract
Butter or oil for frying

Instructions:
Prepare the Blintz Batter:

In a blender or mixing bowl, combine the flour, milk, eggs, sugar, salt, and melted butter. Blend or whisk until smooth. Let the batter rest for about 30 minutes in the refrigerator.

Make the Filling:

In a separate bowl, mix together the cottage cheese (or farmer's cheese), egg, sugar, and vanilla extract, until well combined. Set aside.

Heat a non-stick skillet or crepe pan over medium heat. Lightly grease the pan with butter or oil.
Pour about 1/4 cup of the blintz batter into the pan, swirling it around to coat the bottom evenly. Cook until the edges start to lift and the bottom is lightly golden, about 1-2 minutes.

Remove the cooked blintz from the pan and place it on a plate.

Fill and Fold the Blintzes:

Place a spoonful of the cheese filling in the center of each cooked blintz.
Fold the bottom edge of the blintz over the filling, then fold in the sides, and roll it up tightly to enclose the filling like a burrito.

Whip up a batch and hope there's some left for Shavuos - they disappear fast! 😋

Cheesecake Stuffed Chocolate Chip Cookies

Ingredients:
8 oz cream cheese, at room temperature
1/2 cup confectioners' sugar
1 1/2 sticks (3/4 cup) butter, softened
3/4 cup granulated sugar
3/4 cup dark brown sugar
2 eggs
1 tsp vanilla extract
1/3 cup Wonder Mills Flour
1/2 tsp baking powder
1 tsp baking soda
3/4 tsp salt
1 cup chocolate chips

Directions:
1. Preheat the oven to 350 degrees Fahrenheit (175 degrees Celsius).
2. In a mixing bowl, beat together the cream cheese and confectioners' sugar until well combined. Refrigerate the mixture for at least 30 minutes or until ready to use.
3. For the cookie dough, in another mixing bowl, beat the softened butter with granulated sugar and dark brown sugar until creamy.
4. Add the eggs and vanilla extract to the butter-sugar mixture, and beat until incorporated.
5. Gradually add the Wonder Mills Flour, baking powder, baking soda, and salt to the mixture, mixing until well combined.
6. Hand mix in the chocolate chips until evenly distributed throughout the dough. Refrigerate the cookie dough for 30 minutes.
7. Using a scooper that's 1 3/4 inches wide, scoop cookie dough onto a lined cookie sheet.
8. Flatten each ball of cookie dough and place about a teaspoon of the cheesecake mixture in the center.
9. Gently wrap the cookie dough around the cream cheese filling, forming a ball. Press down slightly to flatten the cookie dough.
10. Bake the cookies in the preheated oven for 12-14 minutes, or until the edges are golden brown.
11. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy your delicious cheesecake stuffed chocolate chip cookies!

Cinnamon Graham Bundt Cake:
3 cups all-purpose Wondermills flour
3 tsp. baking powder
4 eggs
2 cups sugar
1 tsp. vanilla sugar
1 cup oil
1 cup soy milk

STREUSEL
1 cup graham cracker crumbs
½ cup light brown sugar
½ stick margarine
1 tsp. cinnamon

GLAZE
2 cups confectioners’ sugar
½ tsp. cinnamon
3 T. soy milk

TOPPING
½ cup crushed graham cracker
crumbs, for topping

DIRECTIONS
1. Preheat the oven to 350°.

2. Grease a Bundt pan with baking spray that contains flour.

3. Combine the flour and baking powder, then set this aside.

4. In the bowl of an electric mixer, beat together the eggs and sugar until it’s light in color.

5. Add the vanilla sugar, oil and soy milk. Mix for a minute to combine. Add the flour mixture, and mix until just combined.

6. In a separate bowl, mix together the streusel ingredients.

7. Pour half the cake batter into the Bundt pan, then top that with half the streusel mixture. Pour in the remaining half of the cake batter, then top with the remaining streusel crumbs.

8. Bake for 55 to 60 minutes.

9. For the glaze: Mix together the confectioners’ sugar, cinnamon and soy milk in a bowl until a smooth mixture forms.

10. Allow the cake to cool completely.

11. Remove the cake from the pan. Pour the glaze over the cake, then tap the cake gently on the countertop to let the glaze run down slowly.

12. Sprinkle the crushed graham crackers on top.
